These are just the best! Crunchy, sweet and just the right amount of bitter. They are addictive! Serve with a side of gelato, ice cream or sorbet. Or, better yet use the baked cookies to make ice cream sandwiches. 

Makes Approximately 15-20 Cookies


Method Of Prep

  1. This recipe does not require an electric mixer.

  2. Mix all wet ingredients until incorporated. Add and blend in instant espresso powder then add all dry ingredients and mix till just incorporated.

  3. Scoop with #30 scoop, roll in a ball and then roll in granulated sugar.

  4. Place on a sheet pan lined with parchment paper or Silcone baking mat, 2” apart as they will spread

  5. Bake at 350 degrees for 12 min or until done.

  6. Remove from sheet pan to cool on wire rack
