Chocolate Espresso Olive Oil Cookies


Makes Approximately 15-20 Cookies

Ingredients

  • 3/4th Cup O'Live A Little Extra Olive Oil

  • 1 Cup Grated Sugar (Splus More For Rolling

  • 2 Tablespoons of Molasses

  • 2 Eggs

  • 2 Tablespoons O'live A Little Dark Balsamic Vinegar

  • 2 Tablespoons Instant Espresso Powder

  • 1 Teaspoon O'live A Little Pink Himalayan Sea Salt

  • 1/4 Cup Unsweetened Cocoa Powder (Sifted)

  • 2 Teaspoons Cinnamon

  • 1 Cup All-Purpose Flour

  • 2 Teaspoons Baking Soda

Method Of Prep

  1. This recipe does not require an electric mixer.

  2. Mix all wet ingredients until incorporated. Add and blend in instant espresso powder then add all dry ingredients and mix till just incorporated.

  3. Scoop with #30 scoop, roll in a ball and then roll in granulated sugar.

  4. Place on a sheet pan lined with parchment or Sil-Pat 1 ½” – 2” apart as they will spread

  5. Bake at 350 degrees for 12min or until done.

  6. Remove from sheet pan to cool on wire rack
